HARDY BOYZ' CHICKEN-FRIED STREAK

"North Carolina natives Matt and Jeff Hardy lost their mom when they were boys, so these two highflyers learned to cook and sew as youngsters. This dish is in the meat eaters' Hall of Fame, and, ladies, it is indeed the way to a good old boy's heart. Fellas, if your lady can make a main-event chicken-fried steak, you're in luck. And if she can make cream gravy to drown it in, you might want to consider a long-term relationship!"

STEAK:
¾ cup flour
¼ teaspoon paprika
¼ teaspoon salt
¼ teaspoon pepper
1 teaspoon seasoned salt, or to taste
1 ½ pounds (4 ½ -inch thick) rib-eye steaks
1 large egg, beaten
¼ cup cooking oil

GRAVY:
3 tablespoons drippings
1 ¼ cup milk
3 tablespoons flour
1 teaspoon salt
Dash of pepper, or to taste


To make the steak, in a medium bowl, combine the flour, paprika, salt, pepper and seasoned salt.
If necessary, hammer the meat with a meat tenderizer to thin and tenderize it. Dip the steaks first in the egg and then in the flour mixture, coating them thoroughly.
In a 12-inch skillet, brown the meat in hot oil, turning once. Cover and cook over low heat for 40 minutes or until tender.
For the gravy, remove the meat from the oil and pour off all but 3 tablespoons of the drippings. Add ¾ cup of milk, the flour, salt and pepper and stir until well combined. Cook over medium-low heat until bubbly and thickened and add the remaining ½ cup of milk. Cook 1 to 2 minutes more.
Makes 4 servings and 1 ¼ cup of gravy.


HARDY BOYZ' STRAWBERRY-BLUEBERRY SHORTCAKE

"The Hardy Boyz really are brothers, and they may end their careers as the most spectacular tag team in Federation history. No one creates a greater aerial offense than these two, and you can create some excitement of your own with this very healthful dessert."

1 pint ripe strawberries, hulled and quartered
1 pint blueberries
¼ cup granulated sugar
2 teaspoons brown sugar
¼ teaspoon vanilla extract
2 teaspoons lemon extract
1 Entenmann's fat-free Golden Loaf, or your own favorite low-fat brand
1 (8-once) container low-fat Cool Whip


Reserve a few berries for garnish. Combine the berries, granulated sugar, brown sugar, vanilla, and lemon extract and stir until the sugars dissolve. Let the mixture sit for 30 minutes, then refrigerate it for 2 hours.
Slice the loaf and spoon the berry mixture over it. Add a dollop or two of Cool Whip and top with one of the reserved berries.
Makes 6 servings.
